Chicken Broccoli Casserole

This is a recipe that my mom made for us as kids.

I have no idea where she got it but I am sure it was on the back of a soup can.

It’s easy and perfect if you are craving comfort food and has become a staple in our house.

Here is what you need:
1 Bag of Egg Noodles
1 Can of Cream of Mushroom Soup
1 8oz Container of Sour Cream
1-2 Cups of Shredded Cheddar Cheese
1 Head of Broccoli (Steamed)
1 Rotisserie Chicken Shredded

The prep for this dish is to have your chicken shredded, your broccoli steamed and your noodles cooked.
Once you have done that, combine the sour cream and soup in a separate bowl. Mix well.
Pour the soup mixture over your chicken and mix thoroughly….I find using your hands instead of a spoon works best.
Lay your noodles in your baking dish.
Next, put the chicken mixture on top.
Then, you will place your chopped broccoli over the entire dish.
Top with cheese and bake for 25 minutes at 325 degrees.
YUM!

Mushroom Sandwich, Anyone?

It sounds a bit strange but my husband and I had this in Amsterdam and I have been making it ever since!

What you need:

1 clove of Garlic (minced)
Fresh Parsley (finely chopped)
1 Onion (chopped)
1/2 Tablespoon of Olive Oil
1/2 Tablespoon Butter
1 cup of sliced Crimini Mushrooms (I am sure you can use different kinds, Crimini works best for me)
Salt & Pepper
1 Tablespoon Goat Cheese
1 Egg (Over Easy)
Splash of wine (white or red)
1 piece of bread (Your choice, but I found that the thicker, the better)

Preheat your oven to 400 degrees (I think our maximum is 250C do you guys have a different temperature to us?).

Put a saute pan on medium-low heat. Let the pan get hot before adding your olive oil.
Then, add your onion, garlic, butter, salt & pepper.

After a minute or so, add your mushrooms and let this mixture heat up together until you see the water extract from the mushrooms. This usually happens in 3-5 minutes.

During this 3-5 minutes, spread the goat cheese onto your bread and put the bread in the oven for 3-5 minutes. You are just melting the cheese a little so it shouldn’t take long.

The water from the mushrooms should have evaporated by now and this is when you add your wine and turn your heat on low. Keep the pan uncovered and let the wine slowly cook down to nothing! This should take about 10 minutes.

While you wait for your wine to disappear, remove your bread and start to fry your egg over easy.

Once the wine is gone, put the mushroom mixture over your bread and cheese and top it with fresh parsley.

Now you can put your egg over easy on top and enjoy!

Mini Roast Chicken

I’m cooking one of my favourites tonight, it’s easy, cheap and everyone likes it (well except for vegetarians) and I know that Claire will be happy to have the leftovers for lunch at work tomorrow!

What you will need:

4 chicken thighs
1 onion
1 lemon’s juice
Mushrooms (if you want and any other veg you fancy)
Potatoes (the timings are for new potatoes)
Rosemary
Olive oil
Salt and pepper
A large oven dish

This will feed 2-3 people

Before you do anything you want to turn your oven on to 200C so that it’s nice and hot. Slice up your onions and mushrooms and put them in your oven dish, add rosemary, salt, pepper and drizzle a little olive oil. Mix with hands so that everything is covered in oil (this will ensure that nothing burns).

Lay the chicken on top of the onions and mushrooms and add a bit of salt as this will help the skin go crispy. Drizzle just little of olive oil on top (you don’t need much as the thighs are already quite fatty) and make sure the whole surface is covered in oil. Then add the lemon juice and a bit of water – enough to cover the bottom of the whole dish. Put it in the oven.

Then you want to boil your potatoes for about 10 minutes, drain them and cover them all slightly with olive oil. I’d wait until the chicken’s been in the oven for 15 minutes before adding the potatoes.

Check the chicken every 10 minutes and add water when necessary, you want there to be enough liquid at the end to use as gravy. The chicken should take about 45 minutes to cook.

Either have a salad or some green beans with it.

Cream cheese and clams

 I wanted to go to Brick Lane this weekend to try and see if I could buy some cheap sugar, spices and other things for when I do Live Below the Line. Unfortunately the market’s only open on a Sunday and I wasn’t able to go. So instead Alexis and I went to Borough market, for those of you who have been you will know that it is nothing like the market at Brick Lane let alone the prices. But I was able to make quite a yummy dish in the end without it costing us too much money. 

We bought a handful of clams, 4 king prawns and some purple mushrooms I usually pick when I’m in France. We had them for lunch on Sunday but I didn’t have any cream or white wine, what I would usually use to cook clams. So I raided the fridge and found some pickled chillies and philadelphia (cream cheese).

I cut up the two chillies, fried them with butter, crushed garlic and the mushrooms. Once the mushrooms were browned I added the king prawns. In a separate pan I put a glass of water and added the clams, a tablespoon of philadephia and some mixed herbs and covered the pan. Once the clams where cooked, this only takes a few minutes, I decided to add the clams (with all the liquid) in with the mushrooms and prawns and in a minute, ta-da it was ready! We boiled some new potatoes but I think some noodles would go better with this dish. This was easy peasy and is a sure pleaser.
