Brie and bacon chicken

What you will need:
(for two)
2 skinless chicken breasts
4-6 slices of bacon
4 thin slices of brie
1 garlic clove
Mixed herbs or pesto
Half an onion (optional)
Pepper and NO salt (the bacon has enough of that)

Serve with a side veg and either pasta or potatoes or even a nice green salad.

Pre-heat your oven to 200C. Slice the chicken horizontally but make sure you don’t slice all the way through and leave one side attached.  Open up the chicken so it looks a bit like a heart and place two slice of brie, half of a chopped garlic, herbs and pepper. Close up the chicken and wrap it with 3 slices of bacon. The bacon will act as a plaster round the slit chicken so that the brie stays in the chicken as much as possible.

Place both chicken breasts in an oven dish.

If you decide to add some sliced onions (does make it yummy) then add just a little olive oil to the onions and with your hands make sure it covers all the onions (this will stop them burning). Then add a tiny bit of water (so it covers about a millimeter of the dish), you don’t need much with this dish as bacon now a days always seems to be full of it.

Place in the oven for about 30 minutes, check on the chicken half way through.

This shouldn’t take more than 10 minutes to prepare. It’s a very easy meal to make and is really full of flavours.

Enjoy!

I’ve been eating a LOT of fresh fennel these days because it helps support healthy breast milk production. It is also a good vegetable to have in your milk output for any upset stomach that your baby may have.
This recipe is delicious and SO easy to make. Enjoy!

Slaw:
1 Bulb of Fennel (shredded)
1 Carrot (Shredded)
1 Sweet Apple or Cucumber (Shredded)
1 Stick of Chopped Celery (optional)

Dressing:
3 Tablespoons of Fresh Lime or Lemon Juice
1 Tablespoon of Rice Vinegar
1 Teaspoon of Soy Sauce
3 Tablespoons of Sesame Oil
1/2-1 1/2 Tablespoons of Honey (you decide)
1 Cube of Minced Fresh Ginger (Optional)

Combine all shredded ingredients in a large mixing bowl. In a separate bowl, whisk the juice, vinegar, soy sauce and ginger. Slowly add the sesame oil and honey.
Add dressing to slaw and serve immediately or for an even better flavor, chill for 1-3 hours.

Cinnamon and Walnut Banana Cake

Two bananas have slowly been turning blacker and blacker on the top of my fridge. Now my flatmates are always happy when they see this happen as they know exactly what it means, it’s banana cake time!

My friend Claudia is the person who originally gave me her banana cake recipe but it’s different every time I make it now. I’ve realised it doesn’t really matter how much of anything you put in it as long as you have walnuts, cinnamon and honey.

This is a really healthy cake and is perfect for breakfast or an afternoon snack. I’m going to guess the weight of the ingredients I used, but please feel free to change them.

What you will need:

2 very ripe bananas (the blacker the better)
3 tbl of honey
50 grams of melted butter
150 grams of flour
½ tsp of baking soda
2-3 eggs
A big handful of walnuts
1 tbs of cinnamon powder
(you can also add raisins)

Pre-heat your oven to 180C. In a large bowl add the bananas and mush up with a fork and add in all the ingredients, there really is no order. You just need to make sure that you mix in the baking soda with the flour. Mix everything together with a spoon.

I usually use my bread tin but I couldn’t find it last night, instead I used a small ceramic oven dish and it rose more than it usually does, I’m definitely going to use that again.

Butter your dish and slightly powder it with flour, add you batter and leave in the oven for about 20 –  30 minutes depending how moist you want your cake.

PS: If your batter is too dry you can add a little milk

Have fun and let me know how yours goes.
