I went to Waitrose last night and they had Herring Roe for £2.99 a kilo – so I thought I’d give it a go and so for just 52p I got 150g of it. It’s really nice and simple but I have to say that 150g is too much for one person, this was supposed to be my starter but I wasn’t hungry afterwards.

What you will need:

50g roe per person
Slice of nice bread – toasted
A handful of flour
Slice of lemon
Salt & pepper
A small knob of butter
2 tbsp of olive oil

Rince the roe and dry slightly with kitchen paper. Place the flour on a plate and add the roe, ensure the roe is completely dusted in flour. In a pan add the butter and oil, once hot add your roe and cook for a couple of minutes on both sides – they should become nice and golden. Whilst your roe are cooking toast your bread and then place your cooked roe on top of your it, add salt, pepper and a bit of lemon juice – you can serve with a side salad.

This is really easy, cheap and a little different – come on don’t be scared!

Onion and Olive Bread

After a busy Christmas season and getting settled into my new flat I finally got the time to do a proper bit of cooking this weekend. Making bread is a little messy but every time I make it I ask myself why I ever bother to buy it as it’s so easy to make, tastes great and there is a strangely satisfying feeling of seeing it rise.

One of the beauties of making your own bread is that you can put whatever you want in it. From cheese, olives, seeds to lardons.

What you need:
7g of yeast
Pinch of sugar
300ml warm water
500g of flour

150g of roughly chopped green onions
1 1/2 chopped onions
1 tsp salt
1/2 tsp pepper
1 tbsp olive oil
1 tbsp chopped dried rosemary

Add your yeast, warm water and sugar in a bowl and leave for 10 minutes.

In a pan fry the onions until they are golden.

For the dough, in a bowl add the flour and make a little well. In the well add the yeast mixture, onions, olives, rosemary, salt and pepper. Gradually incorporate the flour into the well and mix until it becomes dough. Add  more water or flour as necessary (the dough should not be sticky but elastic).

Place the dough on a clean floured surface and knead for about 5 minutes. Place the dough into a large bowl and cover with a damp cloth and leave to rise for 2 hours in a warm place. After the two hours knead for about a minute and shape into a flattish round shape. Place the dough on a greased baking sheet/ tray. With a knife make criss-cross cuts into the top of the dough and cover the dough for another 30 minutes.

Heat the oven to 220C. Dust the top of the dough with a little flour and place the dough in the oven for 10 minutes. Then lower the heat to 200C and continue cooking 20 minutes. The loaf should sound hollow and have a golden crust.

You can eat it warm or cold. I had some for my breakfast with some smoked salmon, yum!

Cinnamon and Walnut Banana Cake

Two bananas have slowly been turning blacker and blacker on the top of my fridge. Now my flatmates are always happy when they see this happen as they know exactly what it means, it’s banana cake time!

My friend Claudia is the person who originally gave me her banana cake recipe but it’s different every time I make it now. I’ve realised it doesn’t really matter how much of anything you put in it as long as you have walnuts, cinnamon and honey.

This is a really healthy cake and is perfect for breakfast or an afternoon snack. I’m going to guess the weight of the ingredients I used, but please feel free to change them.

What you will need:

2 very ripe bananas (the blacker the better)
3 tbl of honey
50 grams of melted butter
150 grams of flour
½ tsp of baking soda
2-3 eggs
A big handful of walnuts
1 tbs of cinnamon powder
(you can also add raisins)

Pre-heat your oven to 180C. In a large bowl add the bananas and mush up with a fork and add in all the ingredients, there really is no order. You just need to make sure that you mix in the baking soda with the flour. Mix everything together with a spoon.

I usually use my bread tin but I couldn’t find it last night, instead I used a small ceramic oven dish and it rose more than it usually does, I’m definitely going to use that again.

Butter your dish and slightly powder it with flour, add you batter and leave in the oven for about 20 –  30 minutes depending how moist you want your cake.

PS: If your batter is too dry you can add a little milk

Fried aubergine

I’m not a big fan of aubergine but love it cooked this way, it was always one of my favourites when my mum cooked it.

You will need:

1 aubergine
1 egg
Flour
Olive oil
Salt

Beat the egg in a bowl, slice the aubergine (about 1cm thick) and put some flour on a plate. Heat the oil in a pan, make sure the oil covers the whole pan. Once the oil is hot dip a slice of aubergine in the egg (make sure it is all covered), then cover in flour and drop in the oil (repeat process for every slice). Leave the aubergine for a couple of minutes on each side until golden.

Put some kitchen towel on a plate and put the slices of aubergine on it when they are cooked, sprinkle some salt straight away.

This is a very quick and easy way of making aubergine taste super yummy.
