Pinto Bean Burger with Avocado Salsa

I am not  a huge fan of black beans but I wanted to try making a bean burger. I decided to use Pinto Beans instead and it was simple and delicious!

Here is what you need:

For Avocado Salsa:
1 Avocado
1-2 Tablespoons of Salsa (you decide)

Avocado salsa

Once you spoon out the avocado, add 1 or 2 tablespoons of salsa and mix.

For Bean Burger:
1 15 oz can of Pinto Beans (drained and rinsed)
2-3 cloves of garlic (minced)
1 Teaspoon of Cumin
Salt and Pepper to taste
1/4 Cup of Corn
1/4 Cup of Breadcrumbs
1/3 of a Medium Onion (minced)
Fresh Parsley or Cilantro (use what you have)
1/2 Cup White Cheddar Cheese (shredded)

Smash the beans with a fork and then add the remaining ingredients. Stir well but not too much. You want your burgers to be chunky and irregularly shaped.

I cooked them two ways:

If you want your bean burger to be on the dry side, bake them on a cookie sheet for 10 minutes at 400 degrees. If you want them slightly moist, pan fry them for 3-4 minutes on each side.

Pinto Bean Burger with Avocado Salsa

Top with a generous amount of cheese on each burger and add your Avocado Salsa. Enjoy!

Baby Food: I baked a burger for my 1 year old daughter. Once it was done, I mashed it in a tablespoon of rice and added a tablespoon of avocado and 1 tablespoon of pureed carrot. She LOVED it!

Slow Roasted Pork Tacos with Cilantro Lime Sauce

Pork Rub:
1 Tablespoon Black Pepper
1 Tablespoon Chili Powder
1 Tablespoon Paprika
1 Tablespoon Cumin
1 Tablespoon Garlic Powder
1-3 Teaspoons of Vinegar

Place all of your spices in a bowl and mix. Slowly add your vinegar. I cant remember exactly how much I used.
You want your spices to look like wet sand/paste so you can rub it on your pork and have it stick.

Crock Pot Ingredients:
1 Yellow Onion (chopped)
2 Garlic Cloves (crushed)
1 (15-ounce) Can Fire Roasted Tomatoes
4 to 5 Pound Pork Shoulder

Put the onion and garlic in first, then place your seasoned pork on top.
Next pour the tomatoes over it. Cover. Cook on High for 4-6 hours.

The pork will fall off the bone. That is how you know it is ready.
Remove the pork and shred into a separate bowl.

Cilantro Lime Sauce:
1/4 Cup Lime Juice (fresh)
2 Tablespoons Vinegar
1/2 Bunch Cilantro
1 Tablespoon of Honey
1 Tablespoon of Brown Sugar
1/4 Teaspoon Salt
1/3 Clove Garlic (minced)
1 1/2 Tablespoon Dijon Mustard
1 1/2 cups of Salad or Olive Oil

In a blender, mix your cilantro, lime juice and vinegar. Next add your garlic, sugar, honey and salt.
Add mustard. Then, slowly add your oil.

For Tacos:
Avocado
Corn Tortillas

The avocado is a must! The fatty avocado combined with the savory pork and the citrus sauce made this taco outstanding!

My Favorite Grilled Cheese

I’ve been eating grilled cheese like this for about ten years now and often forget that most people don’t add extras like I do.

Eating becomes a challenge when you are taking care of a newborn. Because I am breastfeeding, I have to incorporate healthy foods throughout my day.
This has been my “go-to” when I only have a few minutes to cook but want to feel full and satisfied.

Here ‘s what you need:
2 slices of whole wheat bread
2 slices of cheddar cheese
1 avocado (sliced)
1 tomato (sliced)
1 teaspoon of butter

I buttered one side of each slice of bread and put the butter side down on a hot pan on medium low heat.

Each slice of bread gets a slice of cheese. One piece of bread gets the avocado and the other gets the tomato.

The two slices of bread are cooking simultaneously (open faced) because this grilled cheese is so thick that it’s too hard to flip.

Once the cheese has melted, I place one slice of bread onto the other so that I can enjoy all of the ingredients in every bite.

*Please note that this sandwich is also good cold and great for picnics.
 The ingredients do not take up a lot of room, can be easily assembled and you can usually find the ingredients in any country.
 You can use the exact same ingredients or you can use a fresh baguette and Philadelphia Cream Cheese.

 Mel and I have eaten this sandwich quite a bit when exploring a new city because it is easy to share with someone and inexpensive!
